Chicken Cutlets
One chicken breast makes three cutlets.
  • Start by cutting off the flatter end. That’s the 1st cutlet.
  • Carefully cut the remaining thicker piece in half horizontally. That will give you the 2nd and 3rd cutlets.
  • Pound them lightly to make them all the same thickness – between 1/4 to 1/2 inch.
