Dredge in Flour

This works well with meat and poultry. Be careful with delicate fish filets. Blot the pieces dry. Place in a plastic bag with a few tablespoons of flour, blow up the bag like a balloon and twist closed. Shake and coat evenly. Shake off excess and remove.
