I ❤️ COPPACoppa is an Italian cured meat that, along our whole peninsula, comes with different variants, names and recipes. Today we show you the northern Italy's version, the one represented by the Coppa Piacentina PDO, the Coppa of Parma PGI or the Coppa Mantovana, obtained from the processing of the top part of the pork neck and part of the shoulder (hence its name). The meat, after being salted and massaged to let it absorb the spices, is stuffed into a natural gut and let it age.
